This has been a busy but fun weekend. Blog work, family reunion, more blog work, BBQ with new friends at our local pool, and dinner with a visiting cousin. And of course, lots of play time with Winnie. She turned two months on Saturday so we did a mini photo shoot. Super cute! We made this pizza last weekend and we liked it to much we decided to have it again this week. It is easy, so why not? It is definitely not your average pizza.There is no pizza sauce, no pepperoni, and no cheese. Until now I don’t think that I have ever made or eaten a pizza without cheese. Isn’t the cheese usually the best part? Despite there not being cheese, this was a pretty darn good pizza. It is very similar to these chicken gyros we made a couple years ago only in pizza form. And I liked it even better in pizza form!

Here is what you’ll need

Combine the ingredients for the marinade

Add the chicken and set aside

Shred the cucumbers for the sauce

Combine all the ingredient for the sauce

Roll out the pizza dough and bake

Chicken
  1. 1 chicken breast
  2. 2 garlic cloves, minced
  3. juice of 1 lemon
  4. 2 tablespoons olive oil
  5. 2 tablespoons Greek Yogurt
  6. 1 tablespoon fresh oregano
  7. pinch of salt and pepper
Tzatziki Sauce
  1. 16 ounces Greek yogurt
  2. 1 English cucumber, peeled and shredded
  3. 2 cloves of garlic, minced
  4. 1 teaspoon white wine vinegar
  5. pinch of salt
  6. juice of half a lemon
Pizza
  1. 1 16 inch pizza- store bought or homemade
  2. 1/4 onion, chopped
  3. 1 tomato, chopped
  4. 1 teaspoon fresh oregano, chopped
Instructions
  1. Combine the ingredients for the chicken and allow to marinade in the refrigerator for at least 1 hour.
  2. Shred the cucumber and squeeze out the excess water with your hands or a towel.
  3. Combine all ingredients for the tzatziki sauce. Set aside.
  4. Cook the pizza dough if you are making home made.
  5. The pizza should be about 16 inches in diameter.
  6. Grill the chicken for about 5 minutes per side depending on thickness.
  7. Once the pizza has cooled top with tzatziki sauce.
  8. We used about 1/2 to 3/4 of the sauce.
  9. Cut the chicken, onions, and tomatoes and top the pizza.
  10. Sprinkle with chopped fresh oregano.
Notes
  1. I had homemade pizza dough in the freezer which I used, but you could buy an already cooked crust too if you'd like.

    Oh boy this looks good. I am on Weight Watchers and I am going to try it with the whole wheat Boboli and non-fat yogurt. I’ll bet it’s yummy!

    Hey Kara … What do you mean with “homemade dough in the freezer”? Is it possible to freeze the unbaked dough? Thanks for a hint :)

      Absolutely, you can freeze uncooked pizza dough. I make a triple batch then divide it up and stick 2 in the freezer. I take it out the morning of the day I want to use it and let it rise. Also, in the frozen bread section of the grocery store you can buy frozen pizza dough. Its by the frozen dinner rolls, cinnamon rolls…

        Cool, I just did that :) Since we don’t have frozen bread stuff in Italy, that’s a great idea to have dough handy … my boys will love it! … and please don’t mention cinnamon rolls again: it just makes me cry to be reminded that we live in a country where such yummy things don’t exist ;)
