This summer we seem to be all about the fruity drinks. First there was this, then this and now frozen coconut limeade. I am not sure which is my favorite. I am kind of obsessed with the blue coconut slushies from Sonic and I don’t even mind that they turn my whole mouth blue. They are full of sugar though. I would much rather have a homemade fruity drink with naturally sweet fresh fruit and maybe just a tad of sugar. We keep so much fruit in the house all summer long that we usually have all the ingredients for at least 1 of these drinks.
And it really can’t get any easier than combine ingredients and blend. No cooking, no chopping, no straining. Simply juice, measure, blend, pour drink. Delicious! And refreshing.The less work a recipe requires the better, especially during the summer. I would much rather be sitting at my pool, pretending i’m on vacation, than slaving over a complicated recipe. The coconut milk even has calcium- so healthy! If you are looking for something even simpler try any of these flavored waters.
- 2 1/2 cups crushed ice
- 1 cup coconut milk, we used the refrigerated kind
- 1/3 cup fresh squeezed lime juice
- 3 tablespoons sugar
- lime for garnish
- Blend together the crushed ice, coconut milk, lime juice, and sugar until smooth.
- Garnish with lime.
