Lately I feel like Mexican food is taking over the world. For awhile it was sushi, sushi, sushi but now I feel like its tacos, tacos, tacos. There has always been the good old ground beef tacos but now the varieties are endless. We made super delicious shrimp tacos last week that went straight to the top of my favorite taco list. I feel like tacos have gotten super trendy lately. Short rib tacos, pork belly, even mushroom tacos. My favorite place to get tacos in Chicago is Antique Taco. Unbelievably delicious. My favorite thing about tacos is that you can pick a few different ones to try. Can’t decide between shrimp and mushroom? Get both. Done deal. And what goes best with tacos?
Agua fresca, of course! There are a million varieties of agua fresca. Hibiscus, cucumber, jalapeno!!! But my favorite is the classic lime agua fresca. I just started drinking agua fresca a few years ago. Probably right around the time the taco craze started. Now, it is one of the first things I check for when going to a taco joint. Agua fresca is pretty simple; basically flavored water. You take some kind of fruit juice, vegetable, or flower and combine with simple syrup. Easy stuff. It is delicious and refreshing though. Like I said, lime is my favorite. Well strawberry, too. But you could come up with all kinds of different combinations. What is your favorite?
- 8 limes, juiced and zested
- 1 cup sugar
- 8 cups water
- Juice and zest 8 limes; set aside
- Combine the water and sugar in a saucepan and heat over medium high heat.
- Continue to heat until the sugar dissolves.
- Refrigerate until completely combined.
- Combine the lime juice and zest with the sugar water in a pitcher and stir.
- Serve over ice.
