Pistachio Crusted Flounder

We have been going a little fish crazy around here lately. Luckily, you can never have too many fish recipes. I order a lot of fish when I go out to eat but when I make fish at home it is usually salmon. There is nothing wrong with salmon, but sometimes it is good to change things up a bit. Salmon is so easy to make; i’ve grilled it, baked it, poached it. You get the picture. It is easy to make and healthy too. But, I never know what to do with other types of fish. Awhile back we made cod with a salt and vinegar potato chip crust. I loved it, so I decided I wanted to do another crusted fish. I also love pistachios, so I decided to crust the fish with chopped pistachios.

 When you take 2 things you love and put them together you usually end up with a success. Peanut butter and chocolate, cheese and crackers, and spaghetti and meatballs are all good examples. To that list I can now add fish and salty, crispy crusts. I would say that these are a grown up version of fish sticks. If your husband or wife does not like fish just tell them they are chicken fingers. They will never know the difference! These tasted great and are a good recipe to make during lent.

 

Here is what you’ll need

 

Sprinkle the filets with salt and pepper

Chop the pistachios and combine with the panko

Dip each filet in egg white

Then dip them in the panko/pistachio crumbs

Bake in a roasting pan

Make this fish on Friday, you won’t regret it!

 

Pistachio Crusted Flounder

Ingredients
  

  • 1 lb flounder filets
  • 1 cup chopped pistachios
  • 1 cup panko
  • 1 egg white
  • salt
  • pepper

Instructions
 

  • Preheat the oven to 350 degrees. Sprinkle the flounder filets with saltand pepper. Combine the panko and chopped pistachios. Dip each filet in the eggwhite and then pistachio/panko crumbs. Place on baking sheet or roasting panand bake 7 minutes per side.
