Reuben Dip

Kelly and I mainly do recipes that interest us. Usually with ingredients like nutella, chocolate, sugar, butter and heavy cream. You get the picture. We are dessert people. Obviously. Cliff is not a dessert person, so we try to make things that he enjoys too. Like steak and pasta. Rarely do we make something just for Cliff though. But this is that rare occasion. We are not fans of sauerkraut. Cliff is. And I bet many of you are too. One of Cliff’s favorite sandwiches is a rueben. So we made him rueben dip. What can I say? We’re givers.

 

But Cliff isn’t the only one in the house that likes rueben dip. Kelly’s dachshund Macee loves rueben dip too! Note to self: don’t leave cute little open faced rueben dip sandwiches where Macee can get to them. They will be gone faster than you can say rueben dip!

Here is what you’ll need

Slice the corned beef into small pieces

Combine swiss cheese and cream cheese into a bowl

Add the corned beef

Add the sauerkraut

Add the thousand island dressing

Mix it up!

Spread into a baking dish

Bake for 20 minutes

Keep away from the dog!

Ingredients
  

  • 1/2 cup corned beef, shredded
  • 1/4 cup sauerkraut, drained
  • 1/4 cup Swiss cheese, shredded
  • 4 oz cream cheese
  • 1/4 cup thousand island dressing
  • rye bread

Instructions
 

  • Pre-heat oven to 350 degrees. Mix all items in a large bowl. Spread into a baking dish. Bake for 20 minutes or until golden brown. Serve with rye bread.
