Yogurt Parfait

I am not a big breakfast person.  I almost never make breakfast at home. As long as I keep bagels and whipped cream cheese in the house, Cliff is satisfied. Which reminds me, I need to buy some bagels! Even though I’m not crazy about most breakfast items, I still love to go out to breakfast. For some reason their pancakes and hash brown potatoes are way better than the ones I make. My very favorite breakfast place is Milk & Honey in the Wicker Park neighborhood of Chicago.  It is a tiny little restaurant, but everything they serve is amazing.  Whenever I go to Milk & Honey I always order the same thing. For breakfast I order the yogurt parfait and for lunch I order the pesto pasta salad. And I always go home with a bag of granola!

 

Yogurt parfaits are one breakfast item that I can make just as well as any breakfast place. All you need is the yogurt of your choice. I like strawberry the best, but I’ve used plain and vanilla before too. Add some of your favorite fruit and top with your favorite granola. I always grab a bag of granola from Milk & Honey when I go but they also sell Milk & Honey granola at Whole Foods.  But use whatever granola you can find or make your own. And feel free to add other ingredients such as almonds, flax seed and coconut. This is a great breakfast item because it is quick to assemble and healthy too. A perfect start to your day!

Ingredients
  

  • Yogurt (I used strawberry)
  • Granola
  • Fruit; sliced or chunked (I used apples and strawberries)

Instructions
 

  • Spoon about 3 heaping spoonfuls of yogurt into individual glasses or bowls.  Add sliced fruit and top with granola.
