Cole Slaw with Blue Cheese

Let’s rewind to about a month ago. I was sitting on the train on my way to work…usually I try to read a book or take a nap but this particular time I overheard 2 ladies talking about food. Immediately I started listening in.

Basically one lady was raving about her recent dinner of pulled pork sliders with blue cheese cole slaw. Being the food snob that I am, my initial reaction was “gross!” But it stuck with me and eventually I threw the idea out to Kara and Cliff. They were game! Kara already had a favorite pulled pork slider recipe so we decided to try it out. It turns out the slaw was a perfect touch, the lady from the train was right!

Now…if you don’t like blue cheese then this is probably not the recipe for you; you can definitely taste it! But since I love all kinds of cheese I thought it was delish.

 

Here’s what you’ll need

Mix together both cabbages, carrot and parsley

Combine the sour cream, mayo, mustard, lemon juice and s & p in a bowl. You’ll need this later

Pour in the sour cream/mayo mix

Now break apart the blue cheese and throw that in.

 

After it sits in the fridge for awhile all the flavors come together, its so tasty!!!

Cole Slaw with Blue Cheese

Prep Time 5 minutes
Total Time 5 minutes
Course Salad

Ingredients
  

  • 4 cup cabbage (shredded)
  • 2 cup purple cabbage
  • 1 carrot (shredded)
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tbsp grainy mustard
  • juice from ½ a lemon
  • salt and pepper to taste
  • 1/4 cup blue cheese (crumbled)
  • 1 handful parsley, chopped

Instructions
 

  • Mix both cabbages and carrots in a large bowl. Mix in the chopped parsley. Combine mayo, sour cream, mustard, lemon juice, and salt and pepper in a small bowl then pour onto the slaw. Mix thoroughly. Fold in the blue cheese then cover and let mellow in the fridge for a few hours. Serve with pulled pork sliders or as a side dish.
