Mint Oreo Cupcakes

This week was the 100th birthday of the Oreo. Happy birthday my dear friend! To honor the occasion they created a new Oreo flavor, cake batter. I have seen cake batter Oreos popping up on multiple blogs recently. I was pretty excited to get my hands on some. I love Oreos and I love cake batter, so I had high hopes for cake batter Oreos. But do you think I could find any? No!!! I looked at Target (twice) and a large grocery store by my house. No luck. I am not giving up though; I will find a package. Have you guys tried them? Are they good?

 

Since we couldn’t find any cake batter Oreos we decided to go with mint flavored green Oreos in honor of St. Patrick’ Day. I’d say it worked out quite nicely. My favorite flavor of ice cream has long been mint chocolate chip. I enjoy the chocolate/mint combo almost as much as the chocolate/peanut butter combo. I think the chocolate/mint combo is a love it or hate it flavor pairing. This is one of my favorite frostings we have made. It tastes like cookies and cream with mint. And I really liked the Oreo “crust,” too. If you do not like the chocolate/mint combo feel free to substitute plain Oreos or cake batter Oreos if you can find them.


 

Here is what you’ll need

Put an Oreo in each liner, fill with batter, and cook as instructed

Cream the butter

Add the powdered sugar. Then the heavy cream. Then the vanilla and salt.

Crush the Oreos pretty finely

Add in the mint Oreo crumbs

De-licious!

Mint Oreo Cupcakes

Ingredients
  

  • enough cupcake batter for 12 cupcakes. We used this recipe divided in half.
  • 12 whole mint Oreos
  • 2 cup crushed mint Oreos
  • 1 cup butter
  • 4 cup powdered sugar
  • 2 tbsp heavy cream
  • 1 tsp vanilla
  • 1 pinch of salt

Instructions
 

  • Set 1 mint Oreo in each cupcake liner. Fill with batter and cook as directed. While the cupcakes are cooking start the frosting. Cream the butter and begin adding the powdered sugar gradually. Once the powdered sugar is fully combined add the heavy cream. Mix well and add vanilla and salt. Add a little more heavy cream if it seems dry. Mix for a few seconds and add the mint Oreo crumbs. We used the mixer to mix in the crumbs but if you want bigger chunks of Oreo you can fold them in. Pipe on cooled cupcakes.
