Sauteed Asparagus and Peas

Sometimes I tend to over complicate things. For example, instead of eating plain mushrooms I sometimes fry them and dip them in ranch. There is nothing wrong with fried mushrooms. In fact, I love fried mushrooms! However, I often forget that food prepared simply can be just as enjoyable. That is the case with this recipe. Not complicated, no fancy ingredients, but the taste is fresh and delicious.

My go-to asparagus preparation is roasted. I know I have said this before but I pretty much roast all our vegetables with just a little olive oil and some garlic. I saw this recipe on Pinterest ages ago. It really caught my attention for 2 reasons. 1. It looked delish! 2. I love peas but I don’t make them often enough. The picture reminded me of my love for peas! I had never really thought of combining them with another vegetable though. The picture looked great but I didn’t think this was really “blog material.” This is basically just sautéed peas and asparagus. Very simple. But what is wrong with simple? I suppose if asparagus were not in season you might want to doctor it up with hollandaise sauce or something. But asparagus is fresh and tasty right now, so I think that simple is the way to go. I hope you agree.

 

Here is what you’ll need

 

Cut the asparagus and chop the garlic and shallot

 

Saute the garlic and shallots in the butter

 

Add the asparagus and cook for about 5 minutes, add the peas and cook one more minute. Add the honey, salt, and pepper.

 

A simple, yet delicious meal.

Sauteed Asparagus and Peas

Ingredients
  

  • 2 tbsp butter
  • 1 lb asparagus
  • 1 bag of frozen peas
  • 2 cloves garlic, chopped
  • 1 shallot, chopped
  • 2 tsp honey
  • salt
  • pepper

Instructions
 

  • Cut the asparagus into 2-3 inch pieces. Heat sauté pan over medium high heat; add butter. Sauté garlic and shallots until fragrant. Add the asparagus. Sauté for about 5 minutes. Add the peas and cook 1 additional minute. Remove from heat. Add the honey and sprinkle generously with salt and pepper. Stir well.
