Ever since Winnie was born I have been searching for super easy meals. While I was working I tried to plan quick meals that I could easily make after work. But now, I am looking for even easier meals. Any meals that contain more than 2 or 3 steps likely won’t get done. I have been making all in one meals rather than a meat and a veggie But, I don’t like casseroles so that narrows things down a bit. I’ve been making quick pastas and throwing veggies in there. Or, instead of cooked veggies we have been eating raw. I know its important to eat my veggies so I try not to skip them. If my meat and veggies can somehow be combined and cooked together then all the better.

 

Skewers are a perfect example of meat and veggies combined but not in a casserole. Another great thing about this is that it can be done in steps over the course of a few hours. I can get the chicken marinating and then go take care of Winnie. When I get a chance to work on dinner a little more I can boil the potatoes. Once those are cooked they can sit around for awhile until I am ready to grill the chicken. Once the chicken, asparagus, and potatoes are assembled on the skewers it only takes 10 minutes to grill everything up. And really this is a pretty healthy meal. One problem with chicken kabobs is that often the vegetables don’t always require the same amount of cooking time. You either have to include vegetables that all cook at the same rate as the chicken or you can pre boil some potatoes like I did. Once the potatoes are tender its really just a matter of getting some grill marks on them. Asparagus doesn’t take too long so you do not have to cook it ahead of time. If you are short on time but you want a complete meal that is not a casserole then these lemon chicken, potato, and asparagus skewers are a great option this summer.

 

Here’s what you’ll need

Pound the chicken so that it is the same thickness

Sprinkle generously with salt and pepper

Place in a ziploc bag with 1/4 cup frozen lemonade concentrate and the olive oil

Allow to marinate at least 1/2 an hour

Bring a pot of water to boil and add the potatoes, allow to cook until tender

Place 1/4 cup of frozen lemonade concentrate into a separate bowl

Add the potatoes, chicken, and asparagus to your skewers

Grill about 5 minutes per side or until chicken in cooked

Ingredients
  

  • 1 chicken breast
  • 4-6 baby potatoes
  • 8-10 asparagus spears
  • 1 can frozen lemonade concentrate
  • 1/4 cup cup olive oil
  • 1 pinch of salt and pepper

Instructions
 

  • Pound the chicken so that it is the same thickness.
  • Cut into bite sized pieces.
  • Sprinkle generously with salt and pepper.
  • Place in a ziploc bag with 1/4 cup frozen lemonade concentrate and the olive oil.
  • Allow to marinate at least 1/2 an hour.
  • Place 1/4 cup of frozen lemonade concentrate into a separate bowl.
  • Bring a pot of water to boil.
  • Add the potatoes and allow to cook until tender. Mine took about 20 minutes.
  • Preheat the grill to medium high heat.
  • Add the potatoes, chicken, and asparagus to your skewers.
  • Sprinkle with salt and pepper.
  • Grill about 5 minutes per side or until chicken in cooked.
  • Brush with the reserved lemonade concentrate periodically.
  • Serve Immediately.
