Mimosa Granita

 This summer I am all about frozen or liquid desserts. I would much rather a slurpee or ice cream over a cupcake. Not that I would ever actually say no to the cupcake. Clearly, that would never happen. Clearly… If I could drink my dinner I would. I eat smoothies non-stop. I am running to Sonic for happy hour every chance I get. Let me be clear though, I am not actually running. I am driving. Although, it is close enough that I could run there. Kelly and I talked Cliff into going to Whole Foods for gelato yesterday. Best idea ever. Once he found out they have a bar with $3 drafts he was hooked. Now I can get him to go out for “gelato” any time! Score!

To indulge my ice cream/gelato/slurpee craving we decided to make a granita. And just for fun we threw some booze in there too. Just for good measure. I used 2 parts orange juice to 1 part prosecco. If you need more or less feel free to increase or decrease the amounts. Granita is the easiest thing ever to make. It does take a little bit of time but it is mainly hands off time. All you do is mix together the ingredients (2!!!), freeze, and fluff every once in a while. Doesn’t get much easier than that. This would be a great addition for a summer time brunch party!

Here is what you’ll need

 

Mix together the oj and prosecco

Pour it into a shallow dish and freeze

Fluff with a fork every so often

It is really that easy, I promise!

 

Mimosa Granita

Prep Time 5 minutes
Total Time 5 minutes
Course beverage

Ingredients
  

  • 2 cup orange juice
  • 1 cup Champagne or Prosecco
  • oranges for garnish

Instructions
 

  • Mix together the orange juice and the Prosecco.
  • Pour into a shallow dish and cover with plastic wrap.
  • Freeze for about 10 hours or until frozen.
  • Every few hours scrape the granita with a fork to make it fluffy.
  • Garnish with orange slices.
