This has been a busy but fun weekend. Blog work, family reunion, more blog work, BBQ with new friends at our local pool, and dinner with a visiting cousin. And of course, lots of play time with Winnie. She turned two months on Saturday so we did a mini photo shoot. Super cute! We made this pizza last weekend and we liked it to much we decided to have it again this week. It is easy, so why not? It is definitely not your average pizza.There is no pizza sauce, no pepperoni, and no cheese. Until now I don’t think that I have ever made or eaten a pizza without cheese. Isn’t the cheese usually the best part? Despite there not being cheese, this was a pretty darn good pizza. It is very similar to these chicken gyros we made a couple years ago only in pizza form. And I liked it even better in pizza form!
Here is what you’ll need
Combine the ingredients for the marinade
Add the chicken and set aside
Shred the cucumbers for the sauce
Combine all the ingredient for the sauce
Roll out the pizza dough and bake
Grill the chicken
Slice it up!
Allow the pizza to cool then begin adding the toppings
Don’t forget the colorful tomatoes and fresh oregano

It is like one giant chicken gyro!

Chicken Gyros Pizza
Ingredients
Chicken
- 1 chicken breast
- 2 garlic cloves, minced
- juice of 1 lemon
- 2 tbsp olive oil
- 2 tbsp Greek Yogurt
- 1 tbsp fresh oregano
- pinch of salt and pepper
Tzatziki Sauce
- 16 oz Greek yogurt
- 1 English cucumber, peeled and shredded
- cloves of garlic, minced
- 1 tsp white wine vinegar
- pinch of salt
- juice of half a lemon
Pizza
- 1 16 inch pizza- store bought or homemade
- 1/4 onion, chopped
- 1 tomato, chopped
- 1 tsp fresh oregano, chopped
Instructions
- Combine the ingredients for the chicken and allow to marinade in the refrigerator for at least 1 hour.
- Shred the cucumber and squeeze out the excess water with your hands or a towel.
- Combine all ingredients for the tzatziki sauce. Set aside.
- Cook the pizza dough if you are making home made.
- The pizza should be about 16 inches in diameter.
- Grill the chicken for about 5 minutes per side depending on thickness.
- Once the pizza has cooled top with tzatziki sauce.
- We used about 1/2 to 3/4 of the sauce.
- Cut the chicken, onions, and tomatoes and top the pizza.
- Sprinkle with chopped fresh oregano.
