One thing I’ve noticed as a food blogger is oftentimes we find or create a recipe that turns out really delicious and it’s one we all agree we’d make again. But more times than not these recipes get forgotten in our archives and we don’t make them again. It’s kind of sad actually. Do other bloggers experience the same problemo? Since we all work full time, we get together each weekend to blog and we’re always thinking of new recipes, new ideas, new new new. But I want to enjoy some goodies from LLP past too. As summer winds down, we decided it was time to look back at our summertime favorites and choose some that we must make again!
Now…completely disregard what I just said because these Vanilla and Chocolate Chunk Greek Yogurt Muffins do not fit in the ‘forgotten’ category. We’ve probably made these muffins about 10 times (minimum!) since they posted. In fact, I just made them on Tuesday for a friend. They’re nothing short of amazing. A PERFECT breakfast muffin.
I love these Cranberry Pistachio Energy Bites because they are an ideal on-the-go snack. Pop some in a Ziploc bag and you’re set for a full day of errands, day at pool, baseball game, you name it!
I had to include this Eclair Cake because it’s been a family favorite for as long as I can remember. We stopped making this cake for years because the chocolate frosting wasn’t available in any grocery stores. Luckily, we came up with a homemade frosting that’s even better than store bought This is a perfect summer dessert because it’s no bake…and Labor Day’s right around the corner!
I know this kind of looks like a gloppy mess, but I highly recommend you give it a chance while strawberries and mangos are still in season. Kara and I were basically shoveling this Pistachio and Amaretto Fruit Dip into our mouths it was so good. #noregrets
There are no words. Like….I’ve got ZERO words that can explain how amazing this is. Just try our Samoa Cookie Dip.

Kara has made these Vegan Biscoff Browned Butter Rice Crispies at least a handful of times since they originally posted. And I’m glad she has because I always steal at least 3 or 6. One update though…we’ve started making a non-vegan version. Same thing, but real butter and regular marshmallows. Not because we didn’t love the vegan ones…because..well we’re not vegan. Give me butter!
Summer wouldn’t be summer without guacamole. And this Charred Corn Guacamole with Queso Fresco is probably my new favorite guac. Doesn’t summertime just scream friends, margaritas and chips with freshly made guacamole?!

We talked about making Rumaki for a long time before we actually did it. I thought bacon wrapped water chestnuts sounded a little weird. But all 3 of us were impressed. Plus I love finger foods! I’ve got to remember to make these next time I need a quick and easy app.
We don’t make a ton of pasta during the summer because generally it’s either on the heavy side or it involves letting sauce cook for hours upon hours. Luckily I can get my pasta fix with these Chicken Salad Stuffed Shells…they’re fresh and light and they involve very little stovetop time.
These Thai Chicken Lettuce Wraps are our recreation of a closed restaurant favorite. They totally satisfied my 10+ year long craving for Joanne’s Cupboard. But of course….I forgot and haven’t made them since!
