Remember when we made these short ribs last week. This is part 2 of that recipe. We ate short ribs for lunch the day we made them and then we had some more for dinner later in the week. After those two meals we still had 1 short rib left. I knew that we needed to eat it but I wasn’t sure what to do with it. It wasn’t enough for both Cliff and I to eat for dinner. And it makes for a pretty messy lunch. But what could I do with 1 short rib?
Then I remembered my favorite meal at this restaurant near our house. It is a ridiculous grilled cheese sandwich with mushrooms, short rib meat and a few different cheeses. They also do something really strange with their bread. Instead of slicing the bread the normal way, they slice it lengthwise so that each piece of bread ends up being about 1 foot long. It is a pretty awesome grilled cheese sandwich. I usually only eat 1/3 of the sandwich. It is huge! I rarely order anything else when we go there though. We used only 1 kind of cheese and we sliced our bread the traditional way. I do not have a pan big enough to slice it lengthwise or I might have tried. Anyway, it was the perfect use for the leftover short rib meat. If you don’t have leftover short ribs you should 1) make short ribs or 2) use leftover pot roast meat or shredded pork.
Here is what you’ll need
Saute the mushrooms
Butter the bread

Mushroom and Short Rib Grilled Cheese
Ingredients
- 4 slices of honey wheat bread
- 3 tbsp butter, seperated
- 4 oz ounces baby bella mushrooms, sliced
- salt
- pepper
- 4 oz fontina cheese, shredded
- leftover short rib-see note
Instructions
- Melt 1 tablespoon of butter in a saute pan over medium heat.
- Add the mushrooms and a pinch of salt and pepper.
- Cook for 8-10 minutes.
- Stir frequently and set aside.
- Shred the meat of the leftover short rib.
- Heat a skillet over medium heat.
- Butter 1 side of each piece of bread.
- Add the short rib meat, cheese, and mushrooms to the unbuttered side of 2 pieces of bread.
- Top with the other slice of bread so that the buttered sides are facing out.
- Cook over medium heat until bread is browned and the cheese is melted.’
- Flip one time.
- Serve immediately.
