Christmas totally snuck up on this year. However, we could not let it totally slip by without posting a cookie recipe. Kelly introduced me to mint M&M’s awhile back and they have been my go to M&M ever since. It used to be the pretzel M&M’s but no longer. I have been pretty obsessed with mint and peppermint lately. So good! Unfortunately I ran out of baking time to make all the mint/peppermint recipes I’d like. There is never enough time to make all of the cookies I’d like though. Not to mention barks, bar cookies, fudge. I could go on and on. But seriously, never enough time!

We tried a few new cookie recipes this year and this was one of my favorites. I just love M&M cookies. They are tasty and I love how colorful the M&M’s are. I decided to make a pudding cookie so these cookies are quite cakey. Definitely not chewy or crispy. But they are chocolatey. And minty! The mint M&M’s worked perfectly in these cookies. I think every cookie tray needs a mint or peppermint recipe. If you are still looking for one, here you go!

Ingredients
  1. 2 1/4 cup flour
  2. 1/4 cup cocoa powder
  3. 1 teaspoon baking soda
  4. 1/2 teaspoon salt
  5. 1 cup butter, room temperature
  6. 3/4 cup brown sugar
  7. 1/4 cup granulated sugar
  8. 1- 3.9 ounce box of instant chocolate fudge pudding mix
  9. 2 large eggs
  10. 1 teaspoon vanilla paste
  11. 1 bag mint M&M’s
Instructions
  1. Pre heat the oven to 350 degrees F
  2. Line 2 baking sheets with parchment paper or a sil pat
  3. Combine the butter and sugar into a stand mixer and beat until fluffy
  4. Add the pudding mix and beat until combined
  5. Add the eggs one at a time
  6. Add the vanilla
  7. In a separate bowl combine the flour, cocoa powder, baking soda, and salt and whisk until combined
  8. Slowly add the dry ingredients to the mixer
  9. Beat until combined, scraping the sides as needed
  10. Fold in the M&M’s
  11. Roll about 2 tablespoons dough into balls and place on baking sheet.
  12. Bake for 10 minutes; allow to cool
