Brownie Bites

In the past we have made these and these. They are both major winners in my book. You can’t go wrong with mixing peanut butter and biscoff with salty pretzels and then dipping them in chocolate.

I mean you can do pretty much anything to peanut butter and biscoff without going wrong. Delicious. For those of you that are counting calories but unwilling to give up your sweet tooth we have the answer for you.

We found this recipe for “skinny” brownie pretzel bites and knew right away we had to give it a try. We are both trying to be more conscientious about what we are eating. But, let’s be honest, we are just not willing to give up all the tasty foods. Just can’t do it. No way, no how.

This is a good compromise though. Slightly healthier but tastes almost as good. And easy to make! I can pop a couple of these each day and not feel massive regret a couple of hours later. Unless on top of these I also eat a whole sleeve of Girl Scout cookies. Whoops.


How to Make Brownie Bites

  1. Combine peanut butter, honey, vanilla, cocoa powder and oats
  2. Sandwich the filling between the pretzles
  3. Dip in chocolate and top with sprinkles

Brownie Bites

Brownie Bites

Prep Time 15 minutes
Total Time 15 minutes

Ingredients
  

  • 1/2 cup oats
  • 2/3 cup creamy peanut butter
  • 1/4 cup honey
  • 1 tsp vanilla
  • 2 tbsp unsweetened cocoa powder
  • 48 pretzel twists
  • 1/2 cup chocolate chips
  • 1/2 white chocolate
  • sprinkles

Instructions
 

  • Ground the oats in a food processor.
  • Combine the peanut butter and honey and microwave for 1 minutes on high power.
  • Stir in the vanilla and cocoa powder.
  • Stir in the oats.
  • If its too liquidy add another tablespoon of oats.
  • Roll into 24 balls and sandwich between pretzels.
  • Refrigerate for 1/2 hour.
  • Melt the chocolate in the microwave at 3o second intervals until it is melted.
  • Dip the pretzel bites in the chocolate.
  • Top with Sprinkles.
  • Refrigerate until the chocolate hardens.
