Pina Colada Fruit Dip

T minus 8 weeks til we leave for Mexico. It cannot come soon enough for me. I am dying to lie by the pool while sipping pina coladas and strawberry daquiris all day. My biggest decision will be how many orders of shrimp I should order for dinner each night. 1? 2? 3? But until then, I will have to continue to live with the snow and cold by eating tropical fruit.

 

I love to eat fruit all by itself but sometimes I like to step it up a bit with a sweet dip. This is one of my favorite fruit dips we have made yet. It really tastes like a pina colada. Virgin, of course. It doesn’t hurt that it is super easy to make, either. Throw everything in a bowl, mix it with a spoon. No need to dirty your mixer or food processor. We used pineapple, mango, and strawberries but I think cherries, peaches, grapes, and any kind of berry would work just as well. If you can’t be on the beach you might as well eat food that makes you feel  like you are lying on a nice warm beach.

Pina Colada Fruit Dip

Ingredients
  

  • 1 3.4 oz package coconut cream pudding
  • 1 8 oz can crushed pineapple, undrained
  • 1/2 cup milk
  • 1/2 cup plain Greek yogurt
  • Fruit for dipping

Instructions
 

  • Combine all ingredients except dippers into a large bowl.
  • Mix until well combined.
  • Refrigerate at least 1 hour.
  • Serve with fruit dippers.
