I am really excited to share this recipe with you today. It is one of my favorite things that we have made lately. Along with this. You need balance in your life. Salmon + loads of brownie pudding = a VERY good thing. This idea just kind of popped into my head and we decided to go with it. Luckily, it turned out way better than we could have imagined. In fact, my Mom called it the best sandwich she has ever had. I hate to call anything the BEST but it was seriously good.
We eat a lot of greek yogurt in our house. We stopped eating sour cream and instead replace it with Greek yogurt. It pretty much goes with anything. In this sandwich the greek yogurt adds a nice creaminess. I think that the key to this sandwich is getting a nice crust on the salmon. When you bite into you get little bits of crispiness. It is kind of like having a nice bark on a pulled pork sandwich. When you are cooking the salmon do not keep flipping it. Let it cook about 4 minutes per side in order to develop that crust. I really hope you give this one a try.
Here is what you’ll need
Sprinkle the salmon with salt and pepper
Cook the salmon about 4 minutes per side
Combine the yogurt and gorgonzola
Spread the ciabatta with the spread and add the spinach, onions, and tomatoes
Coat the salmon with barbecue sauce
Add the salmon to the sandwich

Barbecue Salmon Sandwich with Yogurt Spread
Ingredients
- 2 ciabatta rolls
- 1 6 oz salmon filet, skin removed
- 1 cup Greek yogurt
- 1/4 cup gorgonzola cheese, crumbled
- handful of baby spinach
- 4 small tomatoes, sliced
- 1/4 red onion, sliced
- salt
- pepper
- 1 tbsp olive oil
- 1 1/2 – 2 tbsp barbecue sauce
Instructions
- Sprinkle the salmon with salt and pepper.
- Heat a saute pan over medium high heat.
- Add 1 tablespoon of olive oil.
- Cook the salmon 4 minutes per side, flipping once.
- While the salmon is cooking, slice the ciabatta, onions, and tomatoes.
- Combine the yogurt and gorgonzola crumbles; mix well.
- Once the salmon is cooked place in a bowl and break apart.
- Don’t mash it to pieces just break it up a little.
- Mix the salmon with the barbecue sauce.
- Spread the yogurt on the bottom half of the ciabatta.
- Top with spinach, tomatoes, and onions.
- Add 1/2 of the salmon to each sandwich.
- Top with the other half of the ciabatta roll.
- Serve immediately.
