Earlier this month we spent a week at an all inclusive resort in Cancun. All inclusives are the best. Unlimited food and drink? Yes, please. I think at some resorts the food quality is not very good. But I think the food quality at Moon Palace is excellent. Sure, we had some things we didn’t like but overall it was excellent. Winnie however, was a monster. Everything we gave her she would throw on the floor. It was embarrassing. Even foods she eats at home ended up on the floor.
Finally we found something she liked. Bananas in yogurt with granola. Simple, fairly healthy, and most importantly, she ate it instead of throwing it. Finally! Of course, the breakfast buffet items vary from day to day so the next day we had to search for something else she would eat. We discovered she is a big fan of ham. Luckily, the bananas ended up on the buffet a few times during our trip. Its such a simple idea but a good one. We decided to recreate it when we got home. Bananas, strawberry yogurt, granola, coconut. No cooking, no measuring; just put it together. And wouldn’t you know, Winnie wouldn’t eat it. Ha! Of course she wouldn’t. Despite her changing tastes, this recipe is still a winner.
Bananas with Yogurt
- 2 bananas
- 1 cup strawberry Greek yogurt
- shredded coconut
- Slice the bananas.
- Mix the bananas and the yogurt.
- Sprinkle with the granola of your choice and coconut.
