Is it possible to have too many salmon recipes? Too many grill recipes? The answer for me is a clear no. When I did my menu planning for this week 3 out of 6 dinners were to be done on the grill. Clearly, I need to incorporate a check of the weather forecast before menu planning. That was me out in the rain grilling burgers last night. That is ok though because they were delish. It is looking like rain most of the week but i’ll be out there anyway. Must stick to menu plan.

 

The more foods I can cook on the grill the better. Fish on the grill is delicious. As is fruit, vegetables, cheese, and of course meat. We whipped up these simple pineapple & salmon teriyaki skewers over the weekend. It is a fresh and light choice for summer, doesn’t dirty excesive amounts of dishes and cooks up quickly. Which allows you more time to enjoy this summer(almost) weather. Or, in my case, this lovely rain.

Here is what you’ll need

Skewer the salmon, pineapple, and red peppers

Grill a few minutes per side

Pineapple & Salmon Teriyaki Skewers

Ingredients
  

  • 1 oz salmon
  • 1 red pepper
  • 1 cup fresh cubed pineapple
  • 1/2 cup teriyaki sauce
  • salt
  • pepper

Instructions
 

  • Preheat your grill to medium high
  • Remove the skin from the salmon
  • Cut the salmon and pineapple into 1-1 1/2 inch cubes
  • Cut the red pepper into thick strips
  • Sprinkle with salt and pepper
  • Place the salmon, pineapple, and red peppers onto 4 skewers
  • Rub the grill grates with olive oil
  • Place the skewers on the grill
  • Brush the skewers with teriyaki sauce
  • Brush the skewers with teriyaki sauce
  • Brush the skewers with teriyaki sauce again
  • Cook for 3 more minutes and serve
